The 2 Best New Food Spots in Lincoln You Need to Try Right Now

Fun fact: back when I was 'blogging' around 2014 on a Tumblr site, I would go around Lincoln and review restaurants. It was a fun time, and there's always been a part of me that wanted to revisit that period.
Time to bring that back to Springboard. For many years, my hometown of Lincoln had suffered from a flood of Italian restaurants. I still don't know why this was the case, and some were great, but no one made an effort to go to these places due to how much choice there was. Eventually, thanks in part to immigration, students, and big investment in the town center, many different restaurants arrived, such as Ribs n' Bibs, Dough Loco, Slow Rise, and more. Now, in 2025, there are so many eateries to choose from that locals are spoilt for choice.
However, two new places opened up in the past month, and since trying both out, I had to write about them — so for this week, you get two reviews for the price of one here. You're welcome.
Liberty Slice Co.

For years, Toby Rovezzano, the owner of Akēdo, a gaming bar in Lincoln, had wanted to serve food in some way. But it wasn't until a visit to New York that Liberty Slice Co, co-founded by Rovezzano and Dave Moore, was born. It's already picking up steam, with influencers such as Kalani Ghost Hunter visiting Liberty Slice Co earlier this month.
I've always loved Pizza, and having visited New York a few times and tasted plenty of pies when I was there, I was curious if it would be as good as the real thing. I can confidently say, that this is the real thing and a perfect addition for Lincoln.
Even ordering a slice or a whole Pizza is a great experience. You walk up to the place, you use the touch screen provided to order how many slices, or a whole Pizza if you wish, and that's it. It's just like ordering at a fast food joint, it's very easy. When it comes to pricing, a slice starts from £3.95, with a whole Pizza for £25 or £27, depending on the topping. Yes, it may seem expensive, but compared to chains like Domino's Pizza who freely charge £25 for a large Pizza that usually leaves you feeling bloated, the price is worth it for the quality you get from Liberty Slice Co.

When it comes to the taste? I won't be going into Masterchef levels of detail here, but it was amazing. Crispy, fresh, and full of flavor. Also, my dog, Jolly, loved the crusts too, as the photo in the gallery below shows. On my first visit, I decided to buy a slice of every Pizza they were offering, and each one was fantastic. You can easily fill yourself up on three slices, and a whole Pizza can be a food challenge in itself.
Since my first visit, I've walked past, either on my own or with friends, and we've always bought a slice to walk back home with. From ordering to eating, it takes five minutes at the most, which is not something other Pizza places in Lincoln can do.

However, there is one improvement I'd like to see after much thought — homemade sauces. They do offer a selection of sauces now, but they're all in bottles and shakers. Having freshly made dips that could be bought separately would set Liberty Slice Co. apart even more. Not only would customers be tempted to try out the Pizzas, but also how different sauces could change the flavor further. Buffalo, Ranch, Nacho Cheese, and all kinds of American dipping sauces would be amazing, and an easy way to upsell every Pizza slice or whole pie.
Overall, I can see Liberty Slice Co. fast becoming one of Lincoln's best go-to food spots. As long as they stick with what they're doing, refine it, and stay consistent, they'll be around for years to come.
Maddog's Winghouse

When I saw this appear on my Instagram feed, I was surprised. Having lived in Nettleham previously, where Maddog's Winghouse is based, I'm glad I don't live there now, as I'd be going there almost every weekend.

Having opened in February this year, it's already gotten off to a great start. As their name suggests, they offer wings, and wings only. A menu is offered but some of them change almost weekly — for instance, when I visited, two new flavors were already there. They recommend ordering via WhatsApp, but you can walk in and try your luck, as I did one weekend.
I decided to order 12 wings with three flavors: Buffalo, Maddog's Mexican, and Honey BBQ. I sat and watched them all be made by the owner, who told me that has been a chef for a couple of decades and has been honing every flavor on the menu. After 10 minutes, they were all ready, with each flavor in its own box, and I left.

Even after 20 minutes of going back home, every wing looked as fresh as they did when I saw them be lifted out of the fryer. I had the Buffalo wings first, and they were perfect. Plenty of chicken off the bone, and the sauce was the best I ever had — my only regret was that I didn't order more.

Next up was Maddog's Mexican, a new flavor that the owner said he had perfected. Although they tasted good, I didn't get much Mexican flavor, making me feel that there needed to be more of a kick in the sauce. To finish, I had the Honey BBQ, and the sauce was sticky, juicy, and left me wanting more. Perfectly cooked again, and I wanted to order more.
I'm surprised there isn't a similar place in Lincoln's town center. It seems like an easy win and would set it apart from the other takeaways around. However, Maddog's can hold the crown for now — it's an amazing place that offers very different flavors that cater to those who can either handle or not handle spices. My only request? A delivery option, so I don't need to drive to Nettleham every time I get a craving for the Buffalo wings. As it stands, though, Maddog's is a homerun, and I'm looking forward to having more soon.
Again, I'm not going to do deep dives for these kinds of food-centric issues if I decide to do another. I just want to highlight if the service is good, the food is worth it, and if I'd go again. And both of these places deliver on all three.
It's great that Lincoln, and the surrounding area, offer places like Liberty Slice Co and Maddog's. It gives me hope that there are even more coming soon that offer all kinds of different foods that locals have barely tried before, and that's only a good thing.
